VINNY'S PIZZA DOUGH 
Vinny's Pizza Dough for use with bread machines.:

This recipe is for a ½ batch in common machines (most machines will make this recipe doubled). This recipe may be doubled to make 1 medium and 1 small thin crust pizza or 1 Sicilian pie).

generous ½ cup water (approx. 99°F)
2 tablespoons extra virgin olive oil
2 cups unbleached flour
1 teaspoon salt
½ teaspoon granulated sugar
1 teaspoon rapid-rise active dry yeast (bread machine yeast)
½ cup fine grated parmigiano-reggiano (adds to the dough’s elasticity and certainly adds some flavor)
can add up to 1 tablespoon of dry spices & or herbs
can substitute ¼ flour with bread flour (1/2 cup)
Sicilian style
can add 2 teaspoons honey
2 tablespoons nonfat dry milk powder

Add sugar and yeast to bread machine and then add the water. Stir and give a few moments for the yeast to start to ferment. Add remaining spices and herbs at this time. Always add the oil last, followed by the flour and cheese.

Set your bread machine for dough and turn on. Watch in the first ten minutes and check for wetness; dough should be slightly sticky (balance with small amounts of water or flour). *Never open the machine after the first ten minutes! (this will interrupt the rising process).
