SUGAR-FREE SOY FLOUR PIZZA DOUGH 
This is a recipe I made up for myself. If your trying to watch your diet and you want to cheat a little, no guilt in making pizza for a meal using soy flour. I have made this many times already. I have my family eating it as well.

PIZZA DOUGH:

2 1/2 cups soy flour, divided
1 cup warm water
1 tbsp. active-dry yeast
2 tbsp. olive oil
2 tbsp. Splenda (or sugar)
1 tsp. salt
1 egg (optional)

Note: Get your favorite toppings ready such as shredded Mozzarella cheese, tomato sauce, pepperoni slices, sliced peppers, sliced mushrooms, etc.

Warm 1 cup of water add yeast, let it stand 5 minutes. Add oil, Splenda (or sugar), salt and egg (if using).

Place 1 cup of soy flour in a bowl and add yeast mixture. Next add the rest of the flour, but add slowly it as it can become too dry. The dough is a wet dough so add just enough flour so that you can roll it out on a pizza pan. Let dough rise on pan for 10 minutes. Then pre-bake the crust at 350°F for 7 minutes and remove.

You may now add the toppings for your pizza of your choice, put back in the oven at 400°F for 10 minutes then turn back to 350°F for 10 minutes or until finished.

Note: Make sure you spray your pizza pan with a non-stick cooking spray (Pam) and a sprinkle a little flour or cornmeal on the bottom before laying your dough on top.
