LOW CALORIE CHICKEN CACCIATORE 
2 lbs. chicken, cut up
Water
1 clove garlic
1 onion
1 tbsp. fresh parsley
1 tbsp. fresh basil
Pinch of rosemary
1 tsp. salt
Pinch of pepper
2 fresh peppers
1 sm. can mushrooms
1 sm. can tomatoes or
1 med. size can tomato juice

Remove skin from chicken. Put in skillet and cover with water. Add garlic, parsley, basil, rosemary, salt and pepper. As water is evaporating, add peppers and onion, cut up. After 3 or 4 minutes, add mushrooms. After 5 minutes, add either tomatoes or tomato juice. Simmer for 40-45 minutes.
