PARMESAN STEAKS 
6 cube steaks or round steaks (tenderized)
1/2 c. Parmesan cheese
1 1/2 c. instant mashed potato flakes
3 eggs
1 clove garlic, minced
1 1/2 tsp. salt
1/2 tsp. pepper
1/3 c. shortening
1 c. (8 oz.) tomato sauce

Combine 1/4 cup cheese with potato flakes. Beat eggs, garlic, salt and pepper in bowl. Dip steaks in egg mixture, then in potato flakes. Brown in shortening. Place in 9 inch square dish. Bake at 350 degrees for 15 minutes. Pour tomato sauce over steaks and sprinkle 1/4 cup of cheese on top. Bake (covered) 30-40 minutes until tender.
