RED SNAPPER IN ORANGE SAUCE 
2 lbs. red snapper steaks
3 tbsp. orange juice
1 tbsp. grated orange rind
5 tbsp. butter, melted
1 tsp. lemon juice
Salt and pepper to taste
Dash nutmeg
Parsley

Place steaks in a single layer in a well-greased baking pan. Combine remaining ingredients and pour over fish. Bake in 350 degree oven 25- 30 minutes or until fish flakes easily when tested with a fork.

Remove to a heated serving platter. Pour any sauce remaining in pan over fish and garnish with parsley. Serves 6.
