TINA'S MICROWAVE CORN CASSEROLE 
This is delish and great as a plain & simple, but different side dish. Microwave cooking times may vary. The consistency is that of both cornbread & corn pudding, or a slightly stiffer polenta, if you need to adjust cooking time in your microwave oven. Enjoy!

1 (15 oz.) can whole kernel corn
1 (15 oz.) can cream style corn
1 egg
1/4 cup (1/2 stick) melted butter
2/3 cup flour
1/2 cup cornmeal
1/2 tsp. salt
1 tbsp. baking powder
2 tbsp. canola oil
1/2 cup cheese

Mix first 9 ingredients well in a large bowl. Pour into microwave safe 2-quart baking dish. Microwave for 15 minutes, stirring every 3 minutes. Top with cheese and microwave 1 minute longer.

Serve and enjoy!

Possible stir ins before cooking:

2 cups chopped ham
2 cups chopped smoked sausage or wieners
1/2 cup chopped red, green, yellow or orange bell peppers
1/2 cup chopped jalapenos
1/2 cup minced onions, etc.

... or any combination of stir ins for a 1 pot meal.

Jiffy Variation: You can replace the flour, cornmeal, salt, baking powder & canola oil with 1 box of Jiffy cornbread mix if desired.
