“FISH CAKES” IS IN:

FISH CAKES 
These are addictive, low calorie and really healthy! Serve them as a main dish with a slice of fresh lemon for added freshness and sides. Or, make the fish cakes hamburger bun size, top the fish cake with tartar sauce and put on a bun for a fish cake sammich. Enjoy!

1 can jack mackerel or 1 can salmon or 3 cans tuna
3 eggs
1 to 1 1/2 cups bread crumbs
dash black pepper
dash salt
non-stick cooking spray (Pam)
1 fresh lemon

Drain fish and remove black skin from outside, if desired. Mix first 5 ingredients well. Shape into about 6 patties.

Heat skillet on top of stove on medium heat Spray with non-stick cooking spray (Pam). Lay patties into sprayed heated pan, about 3 per pan. Cover, fry on medium heat until browned, flip, brown the other side.

Slice fresh lemon into about 6 to 8 slices and remove seeds. Squeeze one slice of lemon over top of one fish cake. Salt and pepper to taste if desired. Serve and enjoy!

You can make the patties hamburger bun size, thicker, larger and serve on a bun with tartar sauce for a fish cake sammich. They're really good, easy and everybody loves them!
