VEGETABLE-BEEF SOUP 
1 lg. soup bone with meat
1 can or pkg. mixed vegetables
1 sm. can tomato paste
1 c. each chopped onion & celery
Salt & pepper to taste
1 tsp. basil
Rice or noodle

Put all ingredients except vegetables, rice or noodles in a large saucepan with 1 quart (4 cups) water. Bring to a boil, cover, reduce heat and simmer for at least 3 hours. Remove soup bone and cut meat into small pieces; return meat to pan along with the mixed vegetables and a handful of rice or noodles. Cook for 30 minutes more. NOTE: You can add carrots, potatoes, green beans, peas, cabbage or any leftover vegetables you have in the kitchen (even mashed potatoes). Serves 8 or more.
