2 1/2 c. pecan halves 1 c. sugar 1 tsp. cinnamon 1/2 tsp. salt 1/2 c. water 1 1/2 tsp. vanilla Heat pecans n 375 degree oven for 5 minutes, stirring once. In saucepan, combine remaining ingredients, except vanilla. Heat and stir until mixture comes to boiling and sugar dissolves. Cook without stirring to soft ball stage. Remove from heat. Beat by hand 1 minute or until mixture just begins to get creamy. Add vanilla and nuts. Stir gently until nuts are well coated and mixture is creamy. Turn out on buttered cookie sheet. Separate each nut while warm. |
