POTATO PANCAKES 
1 c. sifted flour
2 tsp. salt
2 tsp. baking powder
1/8 tsp. white pepper
2 eggs, unbeaten
1 c. milk
4 tbsp. butter, melted
2 tbsp. grated onion
3 c. finely grated or shredded raw potatoes

Grate potatoes just before using to prevent discoloration. Combine ingredients in large mixing bowl until blended. Drop by spoonfuls into hot oil, spreading out. Fry over medium heat until crisp and brown. Turn over and brown other side.
