POTATO PANCAKES 
1 egg, beaten
2 tbsp. flour
2 tbsp. grated onion
1/4 tsp. salt
2 c. raw shredded potatoes, rinsed, well drained
1/2 c. butter

Combine egg, flour, onion and salt; mix well. Stir in potatoes. Heat butter in skillet. For each pancake, fry 1/4 cup mixture until crisp and golden brown on both sides. 8 pancakes.
