POTATO PANCAKES 
2 1/2 c. shredded raw potatoes
1/2 c. flour
1 sm. onion, grated
1 egg
Salt and pepper to taste
Vegetable oil

Grate potatoes on large side of hand grater. Mix all ingredients except oil together in a bowl. In a skillet or on griddle put a little oil and drop batter by about 1/4 cupfuls, 3-4 at a time. Cook until brown, about 3 minutes on each side. Add oil as necessary. Drain on paper towels. Serve with applesauce or sour cream as a light main dish or with pot roast as a side dish.
