RICE - BROCCOLI CASSEROLE 
1 onion
1 c. rice
1 can cream of chicken soup
1/2 lb. Velveeta or Cheez Whiz
1/2 can milk
1 tsp. salt
2 pkg. frozen broccoli
Chopped almonds

Saute the onion in butter. Add soup, milk and cheese. Cook slowly, stirring until cheese melts. In another pan, take 2 1/2 cups boiling water, 1 teaspoon salt and 1 cup rice; cook until rice absorbs all of water. Mix with cheese sauce. Then fold in 2 packages chopped frozen broccoli. Sprinkle chopped almonds on top after they have been slightly sauteed in butter. Bake 45 minutes at 350 degrees, uncovered.
