BEER BATTER CHICKEN 
2/3 c. all-purpose flour
1 tsp. salt
1/2 tsp. double acting baking soda
1/3 c. beer
1 egg
Salad oil
1 (3 lb.) broiler fryer, cut up

In bowl with fork, mix first 3 ingredients. In another bowl, beat together beer, egg, and 2 teaspoons salad oil. Stir liquid into flour mixture. Coat half of chicken pieces with batter.

Meanwhile in 12 inch skillet over medium heat, heat 1/2 inch salad oil to 370 degrees. Fry chicken pieces until browned and tender, turning once. Drain on paper towels. Repeat with remaining pieces.

This batter turned out very well. I used chicken tenderloins and they were excellent. Keep in mind with many batters, "less is more"! It helps to drain or slide off the excess on the side of the container before putting the chicken in the fryer.
