OVEN FRIED CHICKEN 
2 - 2 1/2 lb. frying chicken
1 c. cracker crumbs (Ritz)
1/2 c. milk or 1/2 stick melted butter

Wash, dry and disjoint chicken. Dip pieces in milk or brush lightly with butter and roll in cracker crumbs. Place on rack in broiler pan. Cover chicken with aluminum foil first half hour. Cook uncovered 1/2 hour or until done. Cook in a 350 degree oven.
