OVEN FRIED CHICKEN 
6 chicken breasts, skinned
18 Saltine crackers, crushed
2 tbsp. Parmesan cheese
3/4 tsp. pepper
1/2 tsp. each basil, celery seed, oregano, paprika
1/4 c. evaporated skim milk
1 tbsp. canola oil

Combine crumbs and other dry ingredients. Dip chicken in milk and coat with crumbs. Place in lightly greased shallow roasting pan. Bake at 400 degrees for 30 minutes. Brush with oil or spray with cooking spray and bake 10 minutes longer. Yield: 6 servings.
