PAM'S SOUTHWEST CHICKEN PIE | |
2 frozen chicken breasts 1 (15 oz.) can sweet whole kernel corn 1/2 cup chopped jalapenos (sliced in jar is great) non-stick cooking spray (Pam) 2 eggs 1/2 cup milk 1 cup all-purpose flour salt and pepper, to taste shredded cheese (for sprinkling on top) To make this fast and easy I boil up 2 frozen chicken breasts, then cut it up into small pieces. To that add 1 can of whole kernel sweet corn, add to that about 1/2 cup chopped jalapeno peppers, mix well. Pour that into pie pan sprayed with non-stick cooking spray. In the same bowl, beat 2 eggs, add to that 1/2 cup of milk, salt and pepper and 1 cup of flour, mix and pour over top of the chicken mixture. Bake at 400°F for 25 minutes or until top is brown. Take out of the oven, top with cheese, put back in for about 5 minutes or until cheese is melted. Slice and you can top it with salsa, sour cream or both! Submitted by: Pam Gregory |
