EASY RED VELVET CAKE 
1 box Duncan Hines butter cake mix
1 tbsp. cocoa
1 tsp. vanilla
1 cup buttermilk
1 bottle red food coloring
1/2 cup (1 stick) butter
3 eggs
1 tsp. baking soda
1 tbsp. vinegar

Preheat oven to 350°F.

Combine cake mix and cocoa. Stir in vanilla, color, butter, eggs and milk, blend until moistened. Beat for 2 minutes on medium speed. In a small cup, stir together baking soda and vinegar. Add to the cake batter and beat 1 1/2 minutes at medium speed.

Bake at 350°F for 25 to 30 minutes.

CREAM CHEESE FROSTING:

1 (1 lb.) box confectioners' sugar
1 (8 oz.) pkg. cream cheese
4 tbsp. (1/2 stick) butter
1 tsp. vanilla
2 tbsp. milk or cream, if needed for easier spreading

Slice cake layers in half and frost. Frost both tops and sides.
