1 yellow cake mix
2 lbs. Ricotta cheese
4 eggs
1 c. sugar
1 tsp. lemon extract
3-6 tsp. confectioners' sugar

Preheat oven to 350 degrees. Prepare yellow cake mix per directions on box. In a separate bowl, combine Ricotta, eggs, sugar and extract. Prepare 12"x15" pan by greasing and flouring. Pour cake mix into pan and level. Spoon Ricotta cheese mix on top of cake batter. Cover entirely but do not mix the two. Bake at 350 degrees for 30 minutes. Test. Sprinkle top with confectioners' sugar.
