BROILED ZUCCHINI 
4 med. sized zucchini
1/4 lb. butter, softened
6 oz. grated Parmesan cheese
1 tsp. salt

Cut zucchini in quarters; then cut them again into one inch lengths. Blanch zucchini in boiling water for 3 minutes. Drain zucchini and arrange in a single layer in shallow baking pan big enough to hold entire amount. Distribute pats of softened butter evenly on top of zucchini. Sprinkle grated cheese on top of butter and zucchini in an even layer (reserve remaining cheese for serving). Place pan in broiler 3 inches from heat. Cook 5 to 7 minutes or until cheese is melted and zucchini becomes light brown in color. Serves 4.
