LEMON-BUTTER-BROILED CHICKEN
WITH CHICKEN LIVERS
 
3 broilers, split
3/4 c. butter
Salt and pepper
Juice of 2 lemons
Lemon quarters
Chicken livers

Prepare broilers for cooking. Rub generously with softened butter. Sprinkle with salt and pepper. Broil the chicken, skin side down, 7 inches from the heating unit, putting 1 tablespoon lemon juice and 2 teaspoon butter in the hollow of each broiler half. Broil under medium heat for 12 minutes, basting the edges of the broilers with the juice in the center. Turn the broilers, broil skin side up 10 minutes or until golden brown. Baste occasionally with juices in the pan. Remove the broilers from the broiler rack and place them in the broiler pan. Baste chickens again with pan juices. Bake at 300 degrees for 20-30 minutes basting occasionally. This is important to keep the chickens moist. Saute the chicken livers in a little butter. Arrange the broiled chickens on a platter. Garnish with chicken livers and lemon quarters. Easy.
