MOM'S BUTTERSCOTCH PIE 
3/4 c. brown sugar
1/2 c. white sugar
2 heaping tbsp. flour
3 egg yolks
1 1/2 c. water
2 tbsp. butter
1 tsp. vanilla

Combine dry ingredients. Add enough water to make a pasty mixture. Then add the egg yolks and the remaining water. Boil until thick. Then add butter and vanilla. Pour into a 9 inch baked pie shell. Top with meringue and bake at 375 degrees for about 20 minutes.

PERFECT MERINGUE:

1 tbsp. cornstarch
2 tbsp. cold water
1/2 c. boiling water
3 egg whites
6 tbsp. sugar
1/8 tsp. salt

Mix the cornstarch and cold water together. Add the boiling water. Stir constantly. Cook until thick and clear. Cool. Beat egg whites until thick. Gradually add sugar and salt. Beat until glossy and fluffy. Turn mixer to slow speed and add cornstarch mixture, then turn to high speed. Mix well. Pile on pie. Bake at 375 degrees until light brown.
