MANDARIN LETTUCE SALAD 
1/2 head lettuce, torn into bite-size pieces
1 c. chopped celery
1 tbsp. chopped parsley
3 green onions, chopped
1 (11 oz.) can mandarin oranges, drained

SUGARED NUTS:

1/4 c. slivered almonds
3 tbsp. sugar

DRESSING:

3 tbsp. vinegar
1/2 tsp. salt
2 tbsp. sugar
1/4 c. salad oil
Dash of black pepper

To caramelize almonds, put sugar and almonds in a skillet. Stir constantly over low heat until sugar melts, turns brown and collects on almonds. Remove from heat; pour on foil to cool; break into pieces.

Combine lettuce, celery, parsley, green onions and oranges in a salad bowl. Shake dressing ingredients together. Just before serving, add the caramelized nuts and dressing. Toss together. Serves 6.
