CHOCOLATE CHIP-BANANA MUFFINS 
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. mashed very ripe bananas
2/3 c. firmly packed brown sugar
2 lg. eggs
1/4 c. vegetable oil
1 tsp. vanilla extract
1/2 c. miniature chocolate chips

Preheat oven to 400 degrees. Grease 12 (2 1/2 inch) muffin pan cups. Combine flour, baking powder, baking soda and salt in large bowl. Combine bananas, sugar, eggs, oil and vanilla in medium bowl. Stir into dry ingredients just until combined; stir in chocolate chips. Spoon into prepared muffin cups. Bake 25 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool on wire racks. Makes 1 dozen.

This was a very thick recipe, with 2 eggs and no milk, the muffins turned out rather heavy, tasty, just a lil too heavy for my taste.

Tasted good. May have to adjust time of baking. Had to bake less amount of time on second batch for the size of muffins.
