GUMBO FROM THE GARDEN 
1 (16 oz.) pkg. frozen chipped spinach
1 (16 oz.) pkg. frozen mustard greens
1 (16 oz.) pkg. frozen turnip greens
1 (16 oz.) pkg. frozen collard greens
1 head cabbage, shredded
2 qts. water
4 bay leaves
20 fresh basil leaves, chopped
2 tsp. thyme
1/4 tsp. allspice
1/4 tsp. cloves, powdered
1 stick butter
3 onions, chopped
2 Bell peppers, chopped
6 stalks celery, chopped
2 tbsp. oil
1 lb. beef stew meat, cut in sm. pieces
1 lb. ham, cut in sm. pieces
1 lb. Tasso sausage, cut in sm. pieces
1 tbsp. Polander's chopped garlic
2 bunches green onions, chopped
1/2 c. fresh parsley, chopped
1 tsp. Cajun seasoning
Salt & pepper to taste

In large pot, place water. Add spinach, turnip greens, collard greens, mustard greens, cabbage, bay leaves, basil, thyme, allspice, and cloves. Bring to a boil. Lower heat and let simmer, covered for 30 minutes. In large saucepan, melt butter and saute the onions, Bell pepper, celery and garlic until vegetables are tender and brown. Add to the pot with the greens. In same saucepan, add oil and brown stew meat and ham. When done, place in large pot with greens. Add Tasso and cook for one hour on low-medium heat. Add green onions, parsley, Cajun seasoning, salt and pepper and continue to cook for one hour. Serve over rice.
