ITALIAN STYLE TURKEY GUMBO 
1/4 c. olive oil or choice of oil
1/4 c. plus 2 tbsp. flour
2 (6 oz.) cans vegetable juice cocktail
1 lb. ground turkey (1/2 lb. turkey sausage)
1 c. chopped onion
3 minced garlic cloves
1 c. diced bell pepper
1 c. diced red bell pepper
3/4 tsp. salt
1/2 tsp. thyme
1/4 tsp. red pepper
1 c. water
1 (14 1/2 oz.) can stewed tomatoes, drained
1 (10 oz.) pkg. frozen cut okra, thawed

Put oil in a large pot. Add flour to make roux; stir until brown. Add turkey, onions, garlic, bell pepper and cook until turkey is brown. Add vegetables juices, salt, thyme, red bell pepper, 1 cup water, stewed tomatoes and turkey sausage. Bring to boil; cook until done.
