SHRIMP SCAMPI AND PASTA 
2 c. defatted chicken broth
2 tbsp. chopped garlic
4 tbsp. chopped shallots
4 tbsp. chopped parsley
1 1/2 lb. deveined shrimp (tails left on)
Black pepper to taste
Old Bay Seasoning to taste
3/4 lb. pasta

Bring large pot of water to a boil. Add pasta and cook according to directions. Drain and place on platter. Keep warm.

Combine broth, garlic and 3 tablespoons each of shallows and parsley in a large saucepan. Bring slowly to a boil and simmer 2 minutes. Add shrimp to broth. Cook 2 to 3 1/2 minutes or until shrimp are cooked through.

Spoon shrimp over pasta and spoon remaining broth over shrimp. Garnish with remaining parsley and shallots.
