LEFSES 
Lg. kettle of potatoes (10 lbs.)

Cook and rice the potatoes.

Add:

2 sm. eggs or 1 lg. egg, well beaten

Add:

3 tbsp. sugar
1/4 c. cream
1/2 c. butter
1 tsp. salt (probably more)

Let potatoes get cold. To 3-4 cups potatoes add 1 cup flour. Roll out and bake. In each batch there should be 15 lefses.
