CRACKER PUDDING 
1 qt. milk
2 eggs, separated
2/3 c. sugar
2 c. broken saltines
1 c. grated coconut
1 tsp. vanilla

While warming milk, beat egg yolks and sugar until frothy - add to milk. Stir in crackers and coconut. Cook until thick. Remove from heat. Add stiffly beaten egg whites and vanilla. Cool.
