EASY PIEROGI CASSEROLE 
9 lasagna noodles
1 1/2 c. butter
1 sm. onion, finely chopped
3 c. shredded Cheddar
1 box instant potatoes (20 1/2 cup servings) or homemade mashed potatoes

Boil noodles until tender. Drain and cool. Combine butter and onion in skillet and simmer until onion is tender. Cook potatoes according to directions. Make enough for 16 servings. When potatoes are done, stir in cheese.

In 9x13 inch pan, spread some of the melted butter sparingly on bottom of pan, just so noodles won't stick. Layer noodles (3 of them). Use half the potato mixture, spread evenly, then butter and onion over potatoes. Repeat again.

Last, place last 3 noodles on top of casserole to help keep noodles from drying up. Cover with foil. Bake at 350 degrees for 45-60 minutes. Let set 15 minutes before cutting.
