CHINESE CHICKEN SALAD 
2/3 c. salad oil (mild flavored)
1/3 c. rice vinegar
1 tbsp. sugar
1/2 tsp. pepper
1 tbsp. grated ginger root
1 tbsp. sesame oil

SALAD:

Mixed greens
2-3 chopped scallions
2 c. chopped, cooked chicken
Sunflower sprouts or 1 tbsp. sesame seeds
Wonton skins, fried until crisp and chopped into strips

Place salad greens on a large plate. Place chicken in the center of greens. Top with scallions, sprouts, or sesame seeds. Dress salad with dressing and fried wonton skins.
