CHINESE CHICKEN WITH PEANUTS | |
2 chicken breasts, split, skinned & boned 1 tbsp. soy sauce 1 tbsp. dry cooking sherry 4 scallions, cut in 1" pieces 1/2 tsp. ginger 1/2 c. orange juice 2 1/2 tsp. cornstarch 1/4 c. peanut oil 1/2 c. fresh snow peas 1 red or green pepper, cut into 1" strips 1/2 c. chopped roasted peanuts Cut chicken into 1 1/2 x 1 1/2 inch strips. Mix soy sauce, scallions, sherry and ginger. Add chicken and toss well. Set aside. Combine orange juice and cornstarch. Set aside. Heat oil in large skillet. Stir fry chicken with marinade until chicken loses its color, about 2 minutes. Add pea pods, pepper and peanuts. Stir fry 2 minutes. Stir orange juice mixture. Add to chicken and stir fry until slightly thickened. Serve immediately. Serves 4. |
