STIR - FRIED CHINESE CHICKEN AND
PEANUTS
 
1 1/4 lb. chicken cut up in thin strips
2 tbsp. soy sauce
1/2 tsp. ground ginger
2 cloves garlic, minced
2 tsp. cornstarch
1/2 c. water or chicken broth
2 tbsp. oil
1 (10 oz.) frozen broccoli spears, partly thawed
2 lg. ribs celery, diagonally sliced
1 c. sliced radishes
1/2 c. sliced green onions
1/4 c. roasted peanuts
3 c. cooked rice

In medium bowl mix chicken, soy sauce, ginger and garlic. Let stand 10 minutes or more. Stir together cornstarch and water. In heavy skillet heat oil; add chicken mixture and stir-fry over high heat 1 minute. Add broccoli; cook 2 minutes. Add onions, radishes, and cornstarch and water; cook until thick. Serve over rice.
