BLACK EYED PEAS 
3 c. dried black eyed peas
6 to 8 green onions, chopped
1/2 lb. salt pork, chopped
Water, to cover
Salt and pepper, to taste
Hot pepper sauce, to taste

Place peas in a saucepan; add enough water to cook. Soak overnight or for at least four hours. Drain peas, rinse well, and place in a large pot. Add the onions, salt pork, and enough water to cover. Bring to a boil; lower heat and simmer, covered, for 1 1/2 to 2 hours or until tender. Add more water if necessary. Add salt, pepper, and hot pepper sauce to taste.
