BLACK-EYED PEAS 
1 1/4 c. dried black eyed peas
4 c. water
1 c. chopped salt pork or fatback
1 med. onion, chopped

Put together in pot and cook 3 hours or more (boil slowly). When they are soft, remove one cup and mash well and return them to the pot and salt and pepper to taste. Serve over boiled rice with greens and a meat. Some people enjoy cut up raw onions and pepper sprinkled over the top of the peas.
