CHOCOLATE ECLAIR DESSERT (WITH
GRAHAM CRACKERS)
 
1 box graham cracker, do not crush
2 pkgs. vanilla pudding (instant)
3 c. milk
8 oz. c. whipped topping
8 oz. pkg. cream cheese

Beat pudding with milk, add cream cheese and beat well. Use 9x13 inch pan. Line pan with a layer of crackers (whole). Pour half of mixture over crackers. Put another layer of crackers over mixture pour the rest of mixture over them. Put another layer of crackers over that.

ICING:

2 oz. chocolate syrup
3 tbsp. melted butter
2 tbsp. syrup
3 tbsp. milk
1 1/2 c. powdered sugar
1 tbsp. vanilla

Beat well and pour over top of layer of crackers and top with whipped topping. Chill before serving.

The quick way to frost this is to take a can of frosting, partially melt it in microwave and pour it over the top and then chill. Garnish w/ whipped topping before serving.

This is the very best chocolate eclair cake of any I have tried and made. Even people who said they didn't care for eclair cakes said this one is delicious and the best. I have to agree. I have used the can frosting and it is delicious both ways.
