MEXICAN CORNBREAD 
1 env. Mexican cornbread mix
1 sm. (4 serving) can yellow cream style corn
1 lb. grated cheddar cheese
1 lb. ground beef
1 sm. onion, chopped

Mix cornbread mix following directions on package. Add corn. Brown meat and chopped onion together. Pour small amount of cooking oil into baking pan or iron skillet. Preheat pan with oil in 425 degree oven. Pour in layer of cornbread mix then all of meat mixture, then 1/2 cheese; remainder of cornbread mix and finish with remainder of cheese. Bake 40 minutes at 350 degrees.
