“SPAGHETTI SOUP” IS IN:

SPAGHETTI SOUP 
SOUP:

1 whole bag fresh spinach
2 onions, chopped
2 (6 oz. ea.) cans sliced black olives, drained
2 (32 oz. ea.) boxes chicken stock (I use organic)
1 (16 oz.) pkg. whole grain wheat spaghetti noodles
2 (8 oz. ea.) cans tomato sauce
2 (15 oz. ea.) cans diced tomatoes (juice and all)
1 (24 oz.) can pasta sauce (Hunts)
1 cup grated Parmesan cheese

MEATBALLS:

1 (16 oz.) pkg. Italian seasoned ground turkey (Jennie-O)
1 cup grated Parmesan cheese
2 eggs

Put fresh spinach in the bottom of a soup pot with chopped onion and sliced black olives. Pour chicken stock into pot and bring to a rolling boil.

Meanwhile, take the turkey meat and place in a mixing bowl with eggs and Parmesan cheese and place in the refrigerator until ready to use.

In the meantime when the fresh vegetables are cooked through add the noodles, tomato sauce, diced tomatoes, spaghetti sauce and Parmesan cheese.

When noodles are 1/2 way done, form the meat into meatballs and place into the soup. When the noodles and meatballs are done the soup is done.

Serve with a nice big hunk of garlic bread and Enjoy. :)
