JESSICA'S STUFFED MUSHROOMS WITH
BACON
 
Makes an excellent appetizer!!!

1 pkg. whole fresh mushrooms, suitable for stuffing
1 (8 oz.) pkg. cream cheese, softened
1/4 cup shredded cheese (I use Asiago)
1/2 cup real bacon bits (or fried bacon, crumbled)
2 tbsp. chopped chives (plus more for top, if desired)
1 cup bread crumbs
1 tbsp. butter

Preheat oven to 350°F. Pull out stems of mushrooms, setting stems aside. Rinse both mushrooms and stems (separately of course). Chop stems up into little pieces.

Blend together cream cheese, Asiago cheese, bacon bits, chives, chopped stems and bread crumbs

Stuff mushrooms as best as possible until all mixture is gone, it won't hurt to overload!

Put about 1 tablespoon butter in 8x8-inch baking dish. Top off with more chives (optional).

Place in baking dish and bake at 350°F for about 25 to 35 minutes until brown on top.
