CUCUMBERS ON ICE 
2 qts. thinly sliced cucumbers
1 med. onion, thinly sliced
1 tbsp. plus 2 tsp. salt, divided
1 1/2 c. sugar
1/2 c. apple cider vinegar

Place cucumbers and onions in bowl, sprinkle with 1 tablespoon salt. Let stand at room temperature 2 hours. Drain and return to bowl. Sprinkle with remaining salt, sugar and vinegar and stir well. Put in freezer containers and freeze. Serve anytime after freezing. After thawing, store in refrigerator. Makes 7 cups.
