JERSEY OMELET 
4 slices bacon
2 tbsp. minced onion, soaked in 2 tbsp. water 5 min.
1 tsp. shredded parsley
1/2 tsp. seasoned salt
4 eggs
1/2 c. light cream
1 tsp. salt
1/8 tsp. black pepper
1 c. Swiss cheese, grated
Paprika

Cut bacon slices in 2, fry until partially cooked, but not crisp. Remove from pan. Saute onion and parsley in drippings until light brown. Season with 1/2 teaspoon seasoned salt. Spread in 8" pie plate or pan. Beat eggs slightly with cream, season with 1 teaspoon salt and pepper. Pour over onions, sprinkle with paprika. Bake in a 350 degree oven for 15 minutes. Serves 4.
