BAKED RICOTTA OMELET 
4 eggs, well beaten
1 c. ricotta or cottage cheese
1/2 c. Mozzarella cheese
Season to taste

Combine and bake in greased casserole 1/2 hour in 350 degree oven. Cut into squares. Serves 4.

Wow! This was the easiest breakfast I have ever made! I added salt, pepper, basil, oregano, and parsley. My family loved it. I will definitely serve this again and again. Next time I'm adding sauteed peppers or perhaps just serving them on the side.
