BAKED RICOTTA 
2 eggs or egg beaters
1 c. milk
2 slices bread
1/2 c. ricotta cheese
2 tbsp. sugar
1 tsp. vanilla
1/2 tsp. almond, coconut or orange flavoring

Mix all together.

Put in blender. (I just whisk in a bowl)

Spray 1 quart casserole. Pour in mixture and bake at 325 degrees for 30 minutes or until knife comes out clean like custard.

TOPPINGS:

1 c. pineapple
3 tsp. cornstarch
2 tsp. vanilla

Cook until thick and pour on top.
