BUTTERMILK PANCAKES 
1 c. fresh buttermilk
1 tsp. oil
1 egg
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. sugar
1 tsp. baking powder
1 c. regular flour

Mix oil, egg and buttermilk with wire whisk. Add salt, soda, sugar, and baking powder. Blend flour to make desired consistency. Griddle temperature should make water "dance" when a few drops are applied. Cook pancake on one side until bubbles in batter burst, then turn.

4-inch pancakes (also makes good waffles with thicker batter).
