GRAM CRACKER CREAM PIE 
CRUST:

1 1/2 c. graham cracker crumbs
1/2 tsp. flour
1/4 c. sugar
1/4 c. butter

Melt butter in pie pan. Combine dry ingredients, mix with butter. Press mixture to sides and bottom of pan.

FILLING:

For 8" pie (10" pie in parenthesis)

2 (4) tbsp. cornstarch
1/4 (1/2) c. sugar
1/4 (1/2) tsp. salt
3 (6) egg yolks
2 (4) c. scalded milk
1 (2) tsp. vanilla

Mix cornstarch, sugar and salt. Slowly add scalded milk. Cook in double boiler 10 minutes, stirring constantly. Remove from heat, mix in egg yolks. Cook for 2 minutes more. Remove from heat and add vanilla. Pour into crust.

TOPPING: Beat egg whites with number of tablespoons sugar (3 egg whites = 3 tablespoons granulated sugar) until stiff. Put on filling. Bake at 300 to 325 degrees for 20 to 35 minutes.
