GRAHAM CRACKER CUSTARD PIE | |
CRUST: 20 graham crackers 1/2 c. butter 1/2 c. sugar Roll out graham crackers. Melt butter and add to crackers with sugar. Use 3/4 of mixture for pie shell, use balance for top of meringue. Cook shell in microwave for 1 1/2 minutes (turn once during cooking time). FILLING: 2 egg yolks 2 c. milk 2 tbsp. cornstarch (heaping) Pinch of salt 1 c. sugar 1 tsp vanilla Combine everything in saucepan and cook on medium heat until thick; pour into shell. Beat egg whites until foamy; add 3 tablespoons sugar gradually until stiff peaks form. Pile on top of filling and sprinkle remainder of crumbs on top. Bake in 350 degree oven until brown. |
