ZUCCHINI AND SAUSAGE 
1 lg. zucchini
1/4 c. oil
2 lg. tomatoes
1 clove garlic
1 c. water
Oregano to taste
Salt and pepper to taste
1 lb. Italian sweet sausage

Cut large zucchini into slices or chunks. Fry zucchini in 1/4 cup oil for about 5 minutes. Cut up an onion and clove of garlic and add to zucchini. Cut up tomatoes and squeeze juice and add to zucchini (both tomatoes and juice). Pour 1 cup of water to mixture. Sprinkle oregano, salt and pepper to taste. In another pan brown sausage. Place sausage on top of zucchini and simmer until sausage is done.
