ZUCCHINI SAUSAGE 
1 lb. sausage, browned and drained
1 egg, slightly beaten
1/2 c. Parmesan cheese
1 tsp. salt
1/4 tsp. thyme
1/4 c. chopped onion
1/2 c. cracker crumbs
1 lg. zucchini, cooked to fork tender
1/2 tsp. garlic salt
Pepper to taste

Peel zucchini and cut into bite size chunks. Add drained sausage and mix in remaining ingredients. Top with Mozzarella cheese, if desired. Bake uncovered 25 to 30 minutes.
