ZUCCHINI SAUSAGE CASSEROLE 
1 lb. sausage
5 tbsp. flour
6 c. sliced zucchini
1/2 c. chopped onion
2 tbsp. butter
1 (16 oz.) cottage cheese
1/4 c. grated Parmesan cheese
1/4 c. Romano cheese
2 eggs, beaten
1 c. shredded cheddar cheese
1/2 tsp. garlic salt

Preheat oven to 350 degrees. Brown sausage and onions. Drain and toss with 1 tablespoon flour. Spread in an 11"x7" dish. Cook zucchini until brown. Remove and toss with 4 tablespoons flour. Spread 1/2 zucchini over meat. Mix cheeses, eggs and salt. Spoon over zucchini then top with rest of zucchini. Bake 30 minutes then top with cheddar cheese and place in oven until cheese melts.
