ZUCCHINI AND SAUSAGE 
2 med. zucchini, cut into 1/4" slices
1 tbsp. butter
1/2 tsp. thyme
1/2 tsp. dill weed
1/2 lb. Polish sausage (or other) cut into 1/4" slices
1/2 c. grated Cheddar cheese
Dash grated Parmesan (as you like it)
1/2 tsp. salt
Black pepper to taste
Croutons

Cook zucchini and sausage with butter and seasonings and a small amount of water in a large skillet until squash is translucent and liquid is almost cooked away. Remove to covered serving dish. Sprinkle cheese over the top and cover with lid until cheese melts. Sprinkle with croutons and serve.
